Fiskesuppe (nordic Fisherman's Stew)
Fiskesuppe, or Nordic Fisherman's Stew, is a traditional Danish dish that is hearty, comforting, and perfect for a cold winter's day. This creamy seafood soup is packed with fresh fish, shrimp, and vegetables, making it a wholesome and satisfying meal.
Ingredients
- 1 lb white fish fillets, such as cod or haddock, cut into chunks
- 8 oz shrimp, peeled and deveined
- 1 onion, finely chopped
- 2 carrots, sliced
- 2 celery stalks, chopped
- 2 potatoes, diced
- 4 cups fish or vegetable broth
- 1 cup heavy cream
- 2 tbsp butter
- 2 tbsp all-purpose flour
- 1 bay leaf
- Salt and pepper to taste
- Fresh dill for garnish
Instructions
- In a large pot, melt the butter over medium heat. Add the onion, carrots, and celery, and cook until softened.
- Sprinkle the flour over the vegetables and stir to coat. Cook for 1-2 minutes to remove the raw flour taste.
- Pour in the fish or vegetable broth and add the potatoes and bay leaf. Bring to a simmer and cook for 10 minutes, or until the potatoes are tender.
- Add the fish and shrimp to the pot, and cook for 5-7 minutes, or until the seafood is cooked through.
- Stir in the heavy cream and season the soup with salt and pepper to taste.
- Remove the bay leaf and serve the fiskesuppe hot, garnished with fresh dill.
