Five Elements Buddha Bowl (五行佛碗)

Ingredients

  • 1 cup quinoa, rinsed
  • 1 sweet potato, cubed
  • 1 cup broccoli florets
  • 1 red bell pepper, sliced
  • 1 cup edamame, shelled
  • 1/4 cup tamari or soy sauce
  • 2 tbsp sesame oil
  • 1 tsp grated ginger
  • 1 clove garlic, minced
  • 1 avocado, sliced
  • 1/4 cup sliced green onions
  • 1 tbsp sesame seeds

Instructions

  1. In a medium pot, combine the quinoa with 2 cups of water. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes or until the quinoa is cooked and the water is absorbed.
  2. While the quinoa is cooking, steam the sweet potato and broccoli until tender, about 10 minutes.
  3. In a small bowl, whisk together the tamari or soy sauce, sesame oil, grated ginger, and minced garlic to make the dressing.
  4. Divide the cooked quinoa, steamed sweet potato, broccoli, red bell pepper, and edamame among four bowls.
  5. Top each bowl with avocado slices and drizzle with the prepared dressing.
  6. Garnish with sliced green onions and sesame seeds before serving.
