Ingredients
- 1 cup quinoa, rinsed
- 1 sweet potato, cubed
- 1 cup broccoli florets
- 1 red bell pepper, sliced
- 1 cup edamame, shelled
- 1/4 cup tamari or soy sauce
- 2 tbsp sesame oil
- 1 tsp grated ginger
- 1 clove garlic, minced
- 1 avocado, sliced
- 1/4 cup sliced green onions
- 1 tbsp sesame seeds
Instructions
- In a medium pot, combine the quinoa with 2 cups of water. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes or until the quinoa is cooked and the water is absorbed.
- While the quinoa is cooking, steam the sweet potato and broccoli until tender, about 10 minutes.
- In a small bowl, whisk together the tamari or soy sauce, sesame oil, grated ginger, and minced garlic to make the dressing.
- Divide the cooked quinoa, steamed sweet potato, broccoli, red bell pepper, and edamame among four bowls.
- Top each bowl with avocado slices and drizzle with the prepared dressing.
- Garnish with sliced green onions and sesame seeds before serving.
