Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 tablespoon vegetable oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 cup sliced mushrooms
  • 2 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • Salt and pepper to taste

Instructions

  1. Rinse the quinoa under cold water.
  2. In a pot, bring the water to a boil and add the quinoa. Reduce heat, cover, and simmer for 15 minutes.
  3. Heat vegetable oil in a large skillet over medium heat. Add the onion and garlic, and cook until softened.
  4. Add the bell pepper and mushrooms, and cook until tender.
  5. Stir in the cooked quinoa, soy sauce, and sesame oil. Season with salt and pepper.
  6. Cook for an additional 2-3 minutes, stirring constantly.
  7. Remove from heat and serve hot.
