Ingredients

  • 1 lb lamb, cubed
  • 2 cups basmati rice
  • 1 onion, finely chopped
  • 3 carrots, julienned
  • 5 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp paprika
  • 4 cups beef broth
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat a large pot over medium heat and brown the lamb cubes.
  2. Add the chopped onion and minced garlic, and sauté until the onion is translucent.
  3. Stir in the cumin and paprika, then add the julienned carrots and rice. Cook for a few minutes, stirring constantly.
  4. Pour in the beef broth and season with salt and pepper. Bring to a boil, then reduce the heat to low, cover, and simmer for 20-25 minutes until the rice is cooked and the liquid is absorbed.
  5. Fluff the rice pilaf with a fork, garnish with fresh parsley, and serve hot.
