Ingredients
- 1 lb lamb, cubed
- 2 cups basmati rice
- 1 onion, finely chopped
- 3 carrots, julienned
- 5 cloves garlic, minced
- 1 tsp cumin
- 1 tsp paprika
- 4 cups beef broth
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat a large pot over medium heat and brown the lamb cubes.
- Add the chopped onion and minced garlic, and sauté until the onion is translucent.
- Stir in the cumin and paprika, then add the julienned carrots and rice. Cook for a few minutes, stirring constantly.
- Pour in the beef broth and season with salt and pepper. Bring to a boil, then reduce the heat to low, cover, and simmer for 20-25 minutes until the rice is cooked and the liquid is absorbed.
- Fluff the rice pilaf with a fork, garnish with fresh parsley, and serve hot.
