Fjordic Seafood Paella

Ingredients
- 1 cup arborio rice
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 cup frozen peas
- 1 lb mixed seafood (such as shrimp, mussels, and fish)
- 4 cups fish or seafood broth
- 1 teaspoon saffron threads
- 1 teaspoon paprika
- 1 lemon, cut into wedges
- Fresh parsley, for garnish
Instructions
- In a large paella pan or skillet, heat some olive oil over medium heat. Add the chopped onion and garlic, and cook until softened.
- Add the sliced red bell pepper and cook for a few minutes until slightly softened.
- Stir in the arborio rice, saffron, and paprika, and cook for 1-2 minutes to toast the rice and spices.
- Pour in the fish or seafood broth and bring to a simmer. Cook for about 15 minutes, stirring occasionally, until the rice is almost tender and most of the liquid is absorbed.
- Add the mixed seafood and frozen peas to the pan, and continue to cook for another 5-7 minutes, or until the seafood is cooked through and the rice is tender.
- Remove the pan from the heat and let it rest for a few minutes before serving. Garnish with fresh parsley and lemon wedges.
