Fjordic Seafood Paella

Ingredients

  • 1 cup arborio rice
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 cup frozen peas
  • 1 lb mixed seafood (such as shrimp, mussels, and fish)
  • 4 cups fish or seafood broth
  • 1 teaspoon saffron threads
  • 1 teaspoon paprika
  • 1 lemon, cut into wedges
  • Fresh parsley, for garnish

Instructions

  1. In a large paella pan or skillet, heat some olive oil over medium heat. Add the chopped onion and garlic, and cook until softened.
  2. Add the sliced red bell pepper and cook for a few minutes until slightly softened.
  3. Stir in the arborio rice, saffron, and paprika, and cook for 1-2 minutes to toast the rice and spices.
  4. Pour in the fish or seafood broth and bring to a simmer. Cook for about 15 minutes, stirring occasionally, until the rice is almost tender and most of the liquid is absorbed.
  5. Add the mixed seafood and frozen peas to the pan, and continue to cook for another 5-7 minutes, or until the seafood is cooked through and the rice is tender.
  6. Remove the pan from the heat and let it rest for a few minutes before serving. Garnish with fresh parsley and lemon wedges.
