Flaky Cheese Pastry (Peynirli Poğaça)
Peynirli Poğaça is a delicious flaky cheese pastry from Crimean Tatar cuisine. These savory pastries are perfect for breakfast, brunch, or as a snack.
Ingredients
- 2 cups all-purpose flour
- 1/2 cup unsalted butter, cold and cubed
- 1/2 cup plain yogurt
- 1 tsp baking powder
- 1/2 tsp salt
- 1 cup feta cheese, crumbled
- 1/4 cup parsley, chopped
- 1 egg, beaten (for egg wash)
Instructions
- In a large bowl, combine the flour, cold cubed butter, plain yogurt, baking powder, and salt. Mix until a dough forms.
- In a separate bowl, mix the crumbled feta cheese and chopped parsley.
- Divide the dough into 12 equal portions and flatten each portion into a small disc.
- Place a spoonful of the feta cheese mixture in the center of each disc.
- Fold the edges of the dough over the filling and pinch to seal, forming a ball.
- Place the filled dough balls on a baking sheet lined with parchment paper.
- Brush the tops of the pastries with beaten egg wash.
- Bake in a preheated oven at 375°F (190°C) for 20 minutes or until golden brown.
- Remove from the oven and let cool slightly before serving.
