Flaky Cheese Pastry (Peynirli Poğaça)

Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup unsalted butter, cold and cubed
  • 1/2 cup plain yogurt
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 cup feta cheese, crumbled
  • 1/4 cup parsley, chopped
  • 1 egg, beaten (for egg wash)

Instructions

  1. In a large bowl, combine the flour, cold cubed butter, plain yogurt, baking powder, and salt. Mix until a dough forms.
  2. In a separate bowl, mix the crumbled feta cheese and chopped parsley.
  3. Divide the dough into 12 equal portions and flatten each portion into a small disc.
  4. Place a spoonful of the feta cheese mixture in the center of each disc.
  5. Fold the edges of the dough over the filling and pinch to seal, forming a ball.
  6. Place the filled dough balls on a baking sheet lined with parchment paper.
  7. Brush the tops of the pastries with beaten egg wash.
  8. Bake in a preheated oven at 375°F (190°C) for 20 minutes or until golden brown.
  9. Remove from the oven and let cool slightly before serving.
