Flaky Flatbread (somali Sabaayad)

Ingredients

  • 3 cups all-purpose flour
  • 1 teaspoon salt
  • 1 tablespoon sugar
  • 1 cup warm water
  • 1/4 cup ghee or butter

Instructions

  1. In a large bowl, combine the flour, salt, and sugar.
  2. Add the warm water gradually, mixing until a dough forms.
  3. Knead the dough on a floured surface for 5-7 minutes until smooth and elastic.
  4. Divide the dough into 6 equal portions and shape each into a ball.
  5. Roll out each ball into a thin circle, then spread a thin layer of ghee or butter on top.
  6. Fold the circle in half, then fold in half again to form a triangle.
  7. Roll out the triangle into a larger, thinner triangle.
  8. Heat a skillet over medium heat and cook each flatbread for 2-3 minutes on each side until golden brown spots appear.
  9. Remove from the skillet and keep warm until ready to serve.
