Flamenco Fusion Vegetable Quesadillas

Ingredients

  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 red onion, thinly sliced
  • 1 cup corn kernels
  • 1 cup black beans, drained and rinsed
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • 8 small flour tortillas
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 2 tbsp olive oil

Instructions

  1. In a large skillet, heat 1 tbsp of olive oil over medium heat. Add the sliced bell peppers and onion, and sauté until softened, about 5 minutes.
  2. Add the corn, black beans, cumin, smoked paprika, salt, and pepper to the skillet. Cook for an additional 2-3 minutes, then remove from heat.
  3. Wipe the skillet clean and return it to medium heat. Brush one side of a tortilla with a little olive oil and place it oiled-side down in the skillet.
  4. Sprinkle a handful of cheese over half of the tortilla, then spoon some of the vegetable mixture on top of the cheese. Fold the tortilla in half to enclose the filling.
  5. Cook the quesadilla for 2-3 minutes on each side, until the tortilla is golden and crispy, and the cheese is melted.
  6. Repeat with the remaining tortillas and filling.
  7. Slice the quesadillas into wedges and serve hot.
