Flan De Coco (coconut Flan)

Ingredients

  • 4 eggs
  • 1 can (14 oz) sweetened condensed milk
  • 1 can (13.5 oz) coconut milk
  • 1 teaspoon vanilla extract
  • 1/2 cup sugar

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a saucepan, cook the sugar over medium heat until it melts and turns golden brown.
  3. Pour the caramelized sugar into a flan mold, tilting the mold to evenly coat the bottom.
  4. In a blender, combine the eggs, sweetened condensed milk, coconut milk, and vanilla extract. Blend until smooth.
  5. Pour the mixture into the flan mold over the caramelized sugar.
  6. Place the flan mold in a larger baking dish and fill the baking dish with hot water to reach halfway up the sides of the flan mold.
  7. Bake in the preheated oven for 1 hour, or until the flan is set.
  8. Remove from the oven and let it cool. Refrigerate for at least 4 hours or overnight.
  9. To serve, run a knife around the edges of the flan, place a serving plate on top, and carefully invert the flan onto the plate.
