Ingredients
- 1 cup sugar
- 1/4 cup water
- 1 can (14 oz) sweetened condensed milk
- 1 can (13.5 oz) coconut milk
- 5 large eggs
- 1 teaspoon vanilla extract
Instructions
- In a small saucepan, combine the sugar and water. Cook over medium heat, swirling the pan occasionally, until the sugar is dissolved and turns a deep amber color.
- Pour the caramel into a 9-inch round baking dish, tilting the dish to coat the bottom evenly. Set aside to cool and harden.
- Preheat the oven to 350°F (175°C).
- In a blender, combine the sweetened condensed milk, coconut milk, eggs, and vanilla extract. Blend until smooth.
- Pour the mixture over the hardened caramel in the baking dish.
- Place the baking dish in a larger roasting pan. Fill the roasting pan with hot water halfway up the sides of the baking dish.
- Bake in the preheated oven for 50-60 minutes, or until the flan is set but still slightly jiggly in the center.
- Remove the flan from the water bath and let it cool to room temperature. Then refrigerate for at least 4 hours, or overnight.
- To serve, run a knife around the edge of the flan and invert it onto a serving platter. The caramel will create a delicious sauce for the flan.
