Ingredients

  • 1 cup sugar
  • 1/4 cup water
  • 1 can (14 oz) sweetened condensed milk
  • 1 can (13.5 oz) coconut milk
  • 5 large eggs
  • 1 teaspoon vanilla extract

Instructions

  1. In a small saucepan, combine the sugar and water. Cook over medium heat, swirling the pan occasionally, until the sugar is dissolved and turns a deep amber color.
  2. Pour the caramel into a 9-inch round baking dish, tilting the dish to coat the bottom evenly. Set aside to cool and harden.
  3. Preheat the oven to 350°F (175°C).
  4. In a blender, combine the sweetened condensed milk, coconut milk, eggs, and vanilla extract. Blend until smooth.
  5. Pour the mixture over the hardened caramel in the baking dish.
  6. Place the baking dish in a larger roasting pan. Fill the roasting pan with hot water halfway up the sides of the baking dish.
  7. Bake in the preheated oven for 50-60 minutes, or until the flan is set but still slightly jiggly in the center.
  8. Remove the flan from the water bath and let it cool to room temperature. Then refrigerate for at least 4 hours, or overnight.
  9. To serve, run a knife around the edge of the flan and invert it onto a serving platter. The caramel will create a delicious sauce for the flan.
