Ingredients

  • 4 eggs
  • 1 can (14 oz) sweetened condensed milk
  • 1 can (13.5 oz) coconut milk
  • 1 teaspoon vanilla extract
  • 1 cup shredded coconut
  • 1 cup sugar

Instructions

  1. In a saucepan, melt the sugar over medium heat until it turns into a golden caramel. Pour the caramel into a flan mold, tilting the mold to coat the bottom evenly. Set aside to cool.
  2. In a blender, combine the eggs, sweetened condensed milk, coconut milk, vanilla extract, and shredded coconut. Blend until smooth.
  3. Pour the mixture into the flan mold over the caramel. Cover the mold with aluminum foil.
  4. Place the flan mold in a larger baking dish and fill the baking dish with hot water until it reaches halfway up the sides of the flan mold.
  5. Bake in a preheated oven at 350°F (175°C) for 1 hour, or until the flan is set. Remove from the oven and let it cool.
  6. Refrigerate the flan for at least 4 hours or overnight before serving.
  7. To serve, run a knife around the edges of the flan, place a serving plate on top of the mold, and carefully invert the flan onto the plate.
