Flan De Coco Y Caramelo (coconut Caramel Flan)
Flan de Coco y Caramelo, also known as Coconut Caramel Flan, is a popular dessert in Ecuadorian cuisine. This creamy and decadent dessert is a perfect way to end a delicious meal.
Ingredients
- 1 cup sugar
- 1/4 cup water
- 1 can (14 oz) sweetened condensed milk
- 1 can (13.5 oz) coconut milk
- 5 eggs
- 1 teaspoon vanilla extract
Instructions
- In a saucepan, combine the sugar and water. Cook over medium heat, swirling the pan occasionally, until the sugar is dissolved and turns into a golden caramel. Pour the caramel into a 9-inch round baking dish, tilting the dish to coat the bottom evenly. Set aside to cool.
- Preheat the oven to 350°F (175°C).
- In a blender, combine the sweetened condensed milk, coconut milk, eggs, and vanilla extract. Blend until smooth.
- Pour the mixture over the cooled caramel in the baking dish.
- Place the baking dish in a larger roasting pan. Fill the roasting pan with hot water halfway up the sides of the baking dish.
- Bake in the preheated oven for 1 hour, or until the flan is set and a toothpick inserted into the center comes out clean.
- Remove the flan from the water bath and let it cool to room temperature. Then refrigerate for at least 4 hours, or overnight.
- To serve, run a knife around the edge of the dish and invert the flan onto a serving plate. The caramel will create a delicious sauce over the flan.
