Flan De Coco Y Caramelo (coconut Caramel Flan)

Ingredients

  • 1 cup sugar
  • 1/4 cup water
  • 1 can (14 oz) sweetened condensed milk
  • 1 can (13.5 oz) coconut milk
  • 5 eggs
  • 1 teaspoon vanilla extract

Instructions

  1. In a saucepan, combine the sugar and water. Cook over medium heat, swirling the pan occasionally, until the sugar is dissolved and turns into a golden caramel. Pour the caramel into a 9-inch round baking dish, tilting the dish to coat the bottom evenly. Set aside to cool.
  2. Preheat the oven to 350°F (175°C).
  3. In a blender, combine the sweetened condensed milk, coconut milk, eggs, and vanilla extract. Blend until smooth.
  4. Pour the mixture over the cooled caramel in the baking dish.
  5. Place the baking dish in a larger roasting pan. Fill the roasting pan with hot water halfway up the sides of the baking dish.
  6. Bake in the preheated oven for 1 hour, or until the flan is set and a toothpick inserted into the center comes out clean.
  7. Remove the flan from the water bath and let it cool to room temperature. Then refrigerate for at least 4 hours, or overnight.
  8. To serve, run a knife around the edge of the dish and invert the flan onto a serving plate. The caramel will create a delicious sauce over the flan.
