Flaounes Fantasy
Flaounes are traditional Cypriot pastries typically made during Easter. They are filled with a unique mixture of cheese, eggs, and a hint of sweetness, wrapped in a rich, yeast-based dough. Flaounes are a delightful treat enjoyed by many families during the holiday season.
Ingredients
- 4 cups all-purpose flour
- 1/2 cup warm milk
- 1/2 cup unsalted butter, melted
- 1/4 cup sugar
- 1 teaspoon active dry yeast
- 3 eggs, beaten
- 1 pound halloumi cheese, grated
- 1/2 cup sultanas (golden raisins)
- 1/4 cup semolina
- 1 teaspoon mahlab (optional)
Instructions
- In a small bowl, dissolve the yeast in the warm milk and let it sit for 5 minutes until frothy.
- In a large mixing bowl, combine the flour, sugar, melted butter, and beaten eggs. Add the yeast mixture and knead the dough until smooth. Cover and let it rise for 1 hour.
- In a separate bowl, mix the grated halloumi cheese, sultanas, semolina, and mahlab.
- Divide the dough into 12 equal portions. Roll out each portion into a circle and place a generous amount of the cheese mixture in the center. Fold the edges of the dough over the filling to form a triangle shape.
- Place the flaounes on a baking sheet, brush the tops with beaten egg, and bake in a preheated oven at 350°F (175°C) for 30 minutes or until golden brown.
