Ingredients
- 2 cups all-purpose flour
- 1 teaspoon active dry yeast

- 2 cups water
- 1 onion, chopped
- 2 tomatoes, diced
- 1 lb beef or chicken, cubed
- 1 cup rice
- 4 cups chicken or beef broth
- 1/2 teaspoon cumin
- 1/2 teaspoon turmeric
- 1/2 teaspoon paprika
- Salt and pepper to taste
Instructions
- In a large bowl, mix the flour, yeast, sugar, and salt. Gradually add water and mix until smooth. Cover and let it rest for 1 hour.
- Heat a non-stick skillet over medium heat. Pour a ladle of the batter onto the skillet and spread it into a thin circle. Cook for 2 minutes on each side until golden brown. Repeat with the remaining batter to make flatbreads.
- In a large pot, sauté the onion until translucent. Add the tomatoes and cook for 5 minutes. Add the beef or chicken and brown on all sides.
- Stir in the rice, broth, cumin, turmeric, paprika, salt, and pepper. Bring to a boil, then reduce heat and simmer for 20 minutes until the rice is cooked and the soup has thickened.
- Serve the flatbread with the soup and rice hot.
