Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon active dry yeast
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 2 cups warm water
  • 2 cups diced vegetables (carrots, potatoes, onions, etc.)
  • 1 cup diced tomatoes
  • 1/2 cup red lentils
  • 4 cups vegetable or chicken broth
  • 1 teaspoon cumin
  • 1 teaspoon turmeric
  • Salt and pepper to taste

Instructions

  1. In a large bowl, mix the flour, yeast, sugar, and salt. Gradually add the warm water, stirring to form a smooth batter. Cover and let it rest for 30 minutes.
  2. Heat a non-stick pan over medium heat. Pour a ladleful of the batter onto the pan and spread it in a circular motion to form a thin flatbread. Cook for 2-3 minutes on each side, until lightly browned. Repeat with the remaining batter to make more flatbreads.
  3. In a large pot, combine the diced vegetables, tomatoes, lentils, broth, cumin, turmeric, salt, and pepper. Bring to a boil, then reduce heat and simmer for 20-25 minutes, until the vegetables and lentils are tender.
  4. Serve the flatbread with the hot soup and enjoy!
