Ingredients
- 2 cups all-purpose flour
- 1 teaspoon active dry yeast
- 1 teaspoon sugar
- 1/2 teaspoon salt
- 2 cups warm water
- 2 cups diced vegetables (carrots, potatoes, onions, etc.)
- 1 cup diced tomatoes
- 1/2 cup red lentils
- 4 cups vegetable or chicken broth
- 1 teaspoon cumin
- 1 teaspoon turmeric
- Salt and pepper to taste
Instructions
- In a large bowl, mix the flour, yeast, sugar, and salt. Gradually add the warm water, stirring to form a smooth batter. Cover and let it rest for 30 minutes.
- Heat a non-stick pan over medium heat. Pour a ladleful of the batter onto the pan and spread it in a circular motion to form a thin flatbread. Cook for 2-3 minutes on each side, until lightly browned. Repeat with the remaining batter to make more flatbreads.
- In a large pot, combine the diced vegetables, tomatoes, lentils, broth, cumin, turmeric, salt, and pepper. Bring to a boil, then reduce heat and simmer for 20-25 minutes, until the vegetables and lentils are tender.
- Serve the flatbread with the hot soup and enjoy!
