Ingredients

  • 2 cups flattened rice (poha)
  • 1 large potato, diced
  • 1 onion, finely chopped
  • 1 green chili, finely chopped
  • 1/2 cup green peas
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon cumin seeds
  • 1/4 cup roasted peanuts
  • 2 tablespoons oil
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions

  1. Rinse the flattened rice in a colander and set aside to drain.
  2. Heat oil in a pan and add cumin seeds. Once they splutter, add the chopped onions and green chilies. Sauté until the onions turn translucent.
  3. Add the diced potatoes and green peas. Cook until the potatoes are tender.
  4. Add turmeric powder and salt. Mix well.
  5. Now, add the drained flattened rice and mix gently to combine all the ingredients. Cook for a few minutes until the flattened rice is heated through.
  6. Garnish with roasted peanuts and fresh coriander leaves before serving.
