Ingredients

  • 2 cups jasmine rice

  • 1/4 cup peanut oil
  • 2 tbsp fish sauce
  • 1 tsp ground ginger
  • 1 tsp garlic powder
  • 1 scotch bonnet pepper, whole
  • 4 cups water

Instructions

  1. Season the fish fillets with salt and pepper, then set aside.
  2. In a large pot, heat the peanut oil over medium heat. Add the chopped onion and cook until translucent.
