Flavorful Fusion (Thiébou Guerte)

Ingredients

  • 2 cups jasmine rice
  • 1 pound fish fillets (such as red snapper or grouper)
  • 1 onion, finely chopped
  • 3 tomatoes, diced
  • 1/2 cup tomato paste
  • 1/4 cup peanut oil
  • 2 carrots, sliced
  • 2 eggplants, cut into chunks
  • 2 cups water
  • Salt and pepper to taste

Instructions

  1. Season the fish fillets with salt and pepper, then set aside.
  2. In a large pot, heat the peanut oil over medium heat. Add the chopped onion and cook until softened.
  3. Add the diced tomatoes and tomato paste to the pot, stirring to combine with the onions.
  4. Place the seasoned fish fillets on top of the tomato mixture in the pot.
  5. Add the carrots and eggplants to the pot, then pour in the water.
  6. Bring the mixture to a boil, then reduce the heat and let it simmer for 30-40 minutes, or until the vegetables are tender and the fish is cooked through.
  7. While the fish and vegetables are simmering, rinse the jasmine rice and cook it according to package instructions.
  8. Serve the cooked fish and vegetables over the jasmine rice, spooning some of the tomato mixture over the top.
