Flavorful Fusion (Thiébou Guerte)
Thiébou Guerte is a flavorful fusion dish that originates from Senegalese cuisine. This delicious recipe combines the rich flavors of West African cuisine with a unique fusion twist.
Ingredients
- 2 cups jasmine rice
- 1 pound fish fillets (such as red snapper or grouper)
- 1 onion, finely chopped
- 3 tomatoes, diced
- 1/2 cup tomato paste
- 1/4 cup peanut oil
- 2 carrots, sliced
- 2 eggplants, cut into chunks
- 2 cups water
- Salt and pepper to taste
Instructions
- Season the fish fillets with salt and pepper, then set aside.
- In a large pot, heat the peanut oil over medium heat. Add the chopped onion and cook until softened.
- Add the diced tomatoes and tomato paste to the pot, stirring to combine with the onions.
- Place the seasoned fish fillets on top of the tomato mixture in the pot.
- Add the carrots and eggplants to the pot, then pour in the water.
- Bring the mixture to a boil, then reduce the heat and let it simmer for 30-40 minutes, or until the vegetables are tender and the fish is cooked through.
- While the fish and vegetables are simmering, rinse the jasmine rice and cook it according to package instructions.
- Serve the cooked fish and vegetables over the jasmine rice, spooning some of the tomato mixture over the top.
