Flavorful Kadlekalu Usli (Horse Gram Stir-Fry)
Horse Gram Stir-Fry, also known as Kadlekalu Usli, is a flavorful and nutritious dish from the Uttara Karnataka Cuisine. This dish is packed with protein and is a popular choice for a healthy and delicious meal.
Ingredients
- 2 cups horse gram (kadlekalu)
- 1 onion, finely chopped
- 2 green chilies, slit
- 1 teaspoon mustard seeds
- 1 teaspoon cumin seeds
- 1/4 teaspoon asafoetida (hing)
- 1 sprig curry leaves
- 2 tablespoons grated coconut
- 2 tablespoons oil
- Salt to taste
Instructions
- Wash and soak the horse gram in water for 4-5 hours or overnight.
- Pressure cook the soaked horse gram with salt and enough water for 3-4 whistles or until soft. Drain any excess water and set aside.
- Heat oil in a pan, add mustard seeds, cumin seeds, and asafoetida. Once the seeds splutter, add curry leaves, green chilies, and onions. Sauté until the onions turn golden brown.
- Add the cooked horse gram and grated coconut. Mix well and stir-fry for 5-7 minutes.
- Adjust salt to taste and remove from heat.
