Flavorful Keerai Kootu

Ingredients

  • 1 cup toor dal (split pigeon peas)
  • 3 cups chopped spinach (keerai)
  • 1 onion, finely chopped
  • 2 tomatoes, chopped
  • 1 tsp turmeric powder
  • 1 tsp cumin seeds
  • 2-3 green chilies, slit
  • 1/2 tsp asafoetida (hing)
  • 1/2 tsp mustard seeds
  • 2-3 dry red chilies
  • 2-3 garlic cloves, minced
  • Salt to taste
  • 2 tbsp oil
  • Water

Instructions

  1. Pressure cook the toor dal with turmeric powder and water until soft.
  2. In a separate pan, heat oil and add mustard seeds, cumin seeds, asafoetida, and dry red chilies. Sauté until the seeds splutter.
  3. Add chopped onions, green chilies, and garlic. Sauté until the onions turn translucent.
  4. Add chopped tomatoes and cook until they turn mushy.
  5. Add the chopped spinach and cook until it wilts.
  6. Mash the cooked dal and add it to the spinach mixture. Add salt to taste and simmer for a few minutes.
  7. Garnish with coriander leaves and serve hot with rice or roti.
