Flavorful Vegetable Biryani
Flavorful Vegetable Biryani is a popular and aromatic dish from Tamil Cuisine that is packed with the goodness of vegetables and fragrant spices.
Ingredients
- 2 cups basmati rice
- 1 large onion, thinly sliced
- 1 cup mixed vegetables (carrots, peas, beans)
- 1/2 cup yogurt
- 1/4 cup chopped mint leaves
- 1/4 cup chopped cilantro
- 1 tablespoon ginger-garlic paste
- Whole spices (cinnamon, cardamom, cloves)
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1/2 teaspoon garam masala
- Salt to taste
- 2 tablespoons ghee
- 2 tablespoons oil
- 3 cups water
Instructions
- Wash and soak the basmati rice for 30 minutes.
- Heat ghee and oil in a large pot, add the whole spices and sauté the onions until golden brown.
- Add the mixed vegetables and sauté for 2-3 minutes.
- Stir in the ginger-garlic paste, turmeric, red chili powder, and garam masala.
- Whisk the yogurt and add it to the pot, then add the mint and cilantro.
- Drain the soaked rice and add it to the pot, then pour in the water and season with salt.
- Cover and cook on low heat for 20 minutes or until the rice is cooked and the water is absorbed.
- Fluff the biryani with a fork and serve hot.
