Flavorful Vegetable Biryani

Ingredients

  • 2 cups basmati rice
  • 1 large onion, thinly sliced
  • 1 cup mixed vegetables (carrots, peas, beans)
  • 1/2 cup yogurt
  • 1/4 cup chopped mint leaves
  • 1/4 cup chopped cilantro
  • 1 tablespoon ginger-garlic paste
  • Whole spices (cinnamon, cardamom, cloves)
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1/2 teaspoon garam masala
  • Salt to taste
  • 2 tablespoons ghee
  • 2 tablespoons oil
  • 3 cups water

Instructions

  1. Wash and soak the basmati rice for 30 minutes.
  2. Heat ghee and oil in a large pot, add the whole spices and sauté the onions until golden brown.
  3. Add the mixed vegetables and sauté for 2-3 minutes.
  4. Stir in the ginger-garlic paste, turmeric, red chili powder, and garam masala.
  5. Whisk the yogurt and add it to the pot, then add the mint and cilantro.
  6. Drain the soaked rice and add it to the pot, then pour in the water and season with salt.
  7. Cover and cook on low heat for 20 minutes or until the rice is cooked and the water is absorbed.
  8. Fluff the biryani with a fork and serve hot.
