Ingredients

  • 1 cup of arborio rice
  • 2 cups of vegetable broth
  • 1/2 cup of white wine

  • 1 shallot, finely chopped
  • 2 cloves of garlic, minced

Instructions

  1. In a saucepan, heat the vegetable broth over medium heat.
  2. In a separate large skillet, melt the butter over medium heat. Add the shallot and garlic, and sauté until softened.
  3. Add the arborio rice to the skillet and stir to coat with the butter. Cook for 2 minutes.
  4. Pour in the white wine and cook until it is absorbed by the rice.
  5. Begin adding the warm vegetable broth to the rice, one ladle at a time, stirring constantly and allowing each addition to be absorbed before adding the next.
  6. Continue this process until the rice is creamy and al dente, about 20 minutes.
  7. Stir in the grated parmesan cheese and fresh parsley. Season with salt and pepper to taste.
  8. Remove from heat and let it rest for a few minutes before serving.
