Flemish Beef Carbonnade (carbonnade Flamande)
Flemish Beef Carbonnade, also known as Carbonnade Flamande, is a traditional Belgian stew made with beef, onions, and beer. This hearty and flavorful dish is perfect for a cozy dinner on a cold evening.
Ingredients
- 2 lbs beef chuck, cut into 1-inch cubes
- 3 large onions, thinly sliced
- 3 tbsp all-purpose flour
- 2 cups Belgian beer
- 1 cup beef broth
- 2 tbsp brown sugar
- 2 tbsp apple cider vinegar
- 2 bay leaves
- 4 slices of bread, toasted
- 2 tbsp Dijon mustard
- Salt and pepper to taste
Instructions
- In a large Dutch oven, cook the beef cubes over medium-high heat until browned on all sides. Remove the beef and set aside.
- Add the sliced onions to the Dutch oven and cook until softened and caramelized, about 10 minutes.
- Sprinkle the flour over the onions and cook for an additional 2 minutes, stirring constantly.
- Pour in the beer and beef broth, stirring to scrape up any browned bits from the bottom of the pot.
- Return the beef to the pot and add the brown sugar, apple cider vinegar, bay leaves, salt, and pepper. Bring the mixture to a simmer.
- Cover the pot and reduce the heat to low. Let the stew simmer for 1.5 to 2 hours, or until the beef is tender.
- Spread the Dijon mustard on the toasted bread slices and place them on top of the stew before serving.
