Flemish Beef Carbonnade (carbonnade Flamande)

Ingredients

  • 2 lbs beef chuck, cut into 1-inch cubes
  • 3 large onions, thinly sliced
  • 3 tbsp all-purpose flour
  • 2 cups Belgian beer
  • 1 cup beef broth
  • 2 tbsp brown sugar
  • 2 tbsp apple cider vinegar
  • 2 bay leaves
  • 4 slices of bread, toasted
  • 2 tbsp Dijon mustard
  • Salt and pepper to taste

Instructions

  1. In a large Dutch oven, cook the beef cubes over medium-high heat until browned on all sides. Remove the beef and set aside.
  2. Add the sliced onions to the Dutch oven and cook until softened and caramelized, about 10 minutes.
  3. Sprinkle the flour over the onions and cook for an additional 2 minutes, stirring constantly.
  4. Pour in the beer and beef broth, stirring to scrape up any browned bits from the bottom of the pot.
  5. Return the beef to the pot and add the brown sugar, apple cider vinegar, bay leaves, salt, and pepper. Bring the mixture to a simmer.
  6. Cover the pot and reduce the heat to low. Let the stew simmer for 1.5 to 2 hours, or until the beef is tender.
  7. Spread the Dijon mustard on the toasted bread slices and place them on top of the stew before serving.
