Ingredients
- 4 large onions, thinly sliced
- 3 tablespoons unsalted butter
- 2 tablespoons all-purpose flour
- 6 cups beef broth
- 1 teaspoon sugar
- Salt and pepper to taste
- 4 slices of crusty bread
- 1 cup grated Gruyère cheese
Instructions
- In a large pot, melt the butter over medium heat. Add the sliced onions and cook, stirring occasionally, until the onions are caramelized and golden brown, about 30-40 minutes.
- Sprinkle the flour over the caramelized onions and cook for an additional 2-3 minutes, stirring constantly.
- Pour in the beef broth and bring the soup to a simmer. Add the sugar, salt, and pepper. Let the soup simmer for 20-30 minutes.
- Preheat the broiler. Ladle the soup into oven-safe bowls. Top each bowl with a slice of crusty bread and a generous amount of grated Gruyère cheese.
- Place the bowls under the broiler for 2-3 minutes, or until the cheese is melted and bubbly.
