Floating Island (île Flottante)
Floating Island (Île Flottante) is a classic French dessert consisting of meringue floating on a vanilla custard, topped with caramel sauce.
Ingredients
- 4 egg whites
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 2 cups whole milk
- 4 egg yolks
- 1/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 1/4 cup caramel sauce
Instructions
- In a large bowl, beat the egg whites until stiff peaks form. Gradually add in the 1/2 cup of sugar and 1 teaspoon of vanilla extract, and continue to beat until glossy.
- In a saucepan, heat the milk over medium heat until it simmers.
- In a separate bowl, whisk together the egg yolks and 1/4 cup of sugar. Slowly pour the hot milk into the egg yolk mixture, whisking constantly.
- Return the mixture to the saucepan and cook over low heat, stirring constantly, until the custard thickens. Remove from heat and stir in 1 teaspoon of vanilla extract.
- To assemble, spoon the custard into serving dishes and top with a dollop of the meringue. Drizzle with caramel sauce.
