Ingredients
- 1 whole chicken, about 3 lbs, cut into pieces
- 3 slices ginger
- 2 scallions, cut into 2-inch pieces
- 2 tbsp Shaoxing wine (Hua Diao wine)
- 10 cups water
- 1 tsp salt, or to taste
Instructions
- In a large pot, bring the water to a boil.
- Add the chicken pieces, ginger, and scallions to the pot.
- Pour in the Shaoxing wine and let it simmer for 2 hours.
- Skim off any foam that rises to the surface.
- Season with salt and serve hot.
