Fluffernutter Cookies
These fluffernutter cookies are a delightful twist on the classic sandwich, combining the flavors of peanut butter and marshmallow in a soft and chewy cookie.
Ingredients
- 1 cup creamy peanut butter
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup marshmallow fluff
- 1/2 cup powdered sugar
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, mix together the peanut butter, granulated sugar, egg, and vanilla extract until well combined.
- Scoop out tablespoon-sized balls of dough and place them on the prepared baking sheet.
- Bake for 8-10 minutes, or until the edges are golden brown.
- Remove from the oven and immediately make an indentation in the center of each cookie using the back of a spoon.
- Fill each indentation with a small spoonful of marshmallow fluff.
- Dust the filled cookies with powdered sugar.
- Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
