Fluffernutter Cookies

Ingredients

  • 1 cup creamy peanut butter
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup marshmallow fluff
  • 1/2 cup powdered sugar

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix together the peanut butter, granulated sugar, egg, and vanilla extract until well combined.
  3. Scoop out tablespoon-sized balls of dough and place them on the prepared baking sheet.
  4. Bake for 8-10 minutes, or until the edges are golden brown.
  5. Remove from the oven and immediately make an indentation in the center of each cookie using the back of a spoon.
  6. Fill each indentation with a small spoonful of marshmallow fluff.
  7. Dust the filled cookies with powdered sugar.
  8. Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
