Fluffy Appam with Coconut Stew is a traditional South Indian dish that is perfect for a hearty breakfast or a light dinner. The soft and spongy appam pairs perfectly with the creamy and flavorful coconut stew, creating a delicious and comforting meal.
Ingredients
- 1 cup raw rice
- 1/2 cup grated coconut
- 1/4 teaspoon active dry yeast
- 1 tablespoon sugar
- 1/2 teaspoon salt
- 1 cup thick coconut milk
- 1 onion, finely chopped
- 2 green chilies, finely chopped
- 1 inch ginger, grated
- 1 sprig curry leaves
- 1/2 teaspoon mustard seeds
- 1/4 teaspoon turmeric powder
- 2 cups water
- Salt to taste
Instructions
- In a bowl, soak the raw rice in water for 4-5 hours.
- Grind the soaked rice along with grated coconut to a smooth batter.
- Dissolve yeast in 2 tablespoons of warm water and add it to the batter.
- Add sugar and salt to the batter and mix well. Allow the batter to ferment for 6-8 hours.
- To prepare the coconut stew, heat oil in a pan and add mustard seeds. Once they splutter, add curry leaves, green chilies, and ginger. Sauté for a minute.
- Add chopped onions and sauté until they turn translucent. Then, add turmeric powder and mix well.
- Pour water and bring it to a boil. Add thick coconut milk and salt. Simmer for a few minutes until the stew thickens.
- To make appam, heat an appam pan and pour a ladleful of batter. Swirl the pan to spread the batter into a thin layer. Cover and cook until the edges turn crispy and the center is soft and spongy.
- Serve the appam hot with coconut stew.
