Fluffy Appam With Coconut Stew

Ingredients

  • 1 cup raw rice
  • 1/2 cup grated coconut
  • 1/4 teaspoon active dry yeast
  • 1 tablespoon sugar
  • 1/2 teaspoon salt
  • 1 cup thick coconut milk
  • 1 onion, finely chopped
  • 2 green chilies, finely chopped
  • 1 inch ginger, grated
  • 1 sprig curry leaves
  • 1/2 teaspoon mustard seeds
  • 1/4 teaspoon turmeric powder
  • 2 cups water
  • Salt to taste

Instructions

  1. In a bowl, soak the raw rice in water for 4-5 hours.
  2. Grind the soaked rice along with grated coconut to a smooth batter.
  3. Dissolve yeast in 2 tablespoons of warm water and add it to the batter.
  4. Add sugar and salt to the batter and mix well. Allow the batter to ferment for 6-8 hours.
  5. To prepare the coconut stew, heat oil in a pan and add mustard seeds. Once they splutter, add curry leaves, green chilies, and ginger. Sauté for a minute.
  6. Add chopped onions and sauté until they turn translucent. Then, add turmeric powder and mix well.
  7. Pour water and bring it to a boil. Add thick coconut milk and salt. Simmer for a few minutes until the stew thickens.
  8. To make appam, heat an appam pan and pour a ladleful of batter. Swirl the pan to spread the batter into a thin layer. Cover and cook until the edges turn crispy and the center is soft and spongy.
  9. Serve the appam hot with coconut stew.
