Fluffy Spinach and Feta Pastry (Börek)
Börek is a popular pastry in Tajik cuisine, typically filled with a savory mixture of spinach and feta cheese. This recipe yields a fluffy and flavorful börek that is perfect for breakfast, brunch, or as a snack.
Ingredients
- 2 cups fresh spinach, chopped
- 1 cup feta cheese, crumbled
- 1/2 cup ricotta cheese
- 1/4 cup fresh parsley, chopped
- 1/4 cup green onions, chopped
- 1/4 teaspoon black pepper
- 1/4 teaspoon nutmeg
- 1/4 teaspoon salt
- 1/4 cup olive oil
- 1 package phyllo dough
- 1/2 cup unsalted butter, melted
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, mix together the spinach, feta cheese, ricotta cheese, parsley, green onions, black pepper, nutmeg, and salt.
- Unroll the phyllo dough and place a damp towel over the sheets to keep them from drying out.
- Brush a sheet of phyllo dough with melted butter, then place another sheet on top and brush with butter. Repeat until you have 6 layers.
- Spread the spinach and cheese mixture evenly over the layered phyllo dough.
- Roll the layered phyllo dough into a log, then coil it into a spiral shape and place it on a baking sheet.
- Brush the top with remaining melted butter.
- Bake in the preheated oven for 30-35 minutes, or until golden brown and crispy.
- Allow to cool for a few minutes before slicing and serving.
