Fluffy Vegetable Pulao

Ingredients

  • 2 cups basmati rice
  • 1 onion, thinly sliced
  • 1 carrot, diced
  • 1 cup green peas
  • 1 bell pepper, diced
  • 4 cloves garlic, minced
  • 1-inch ginger, grated
  • 2 green chilies, slit
  • 2 bay leaves
  • 4 cloves
  • 4 cardamom pods
  • 1 cinnamon stick
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon cumin seeds
  • 2 tablespoons ghee (clarified butter)
  • Salt to taste
  • 4 cups water

Instructions

  1. Rinse the basmati rice under running water and soak for 30 minutes. Drain and set aside.
  2. Heat ghee in a large pot over medium heat. Add the cumin seeds, bay leaves, cloves, cardamom pods, and cinnamon stick. Sauté for a minute until fragrant.
  3. Add the sliced onions, garlic, ginger, and green chilies. Sauté until the onions turn golden brown.
  4. Add the diced carrots, green peas, and bell pepper. Sauté for 2-3 minutes.
  5. Stir in the soaked rice, turmeric powder, and salt. Mix well to coat the rice with the vegetables and spices.
  6. Pour in the water and bring to a boil. Reduce the heat to low, cover the pot, and let the pulao simmer for 15-20 minutes until the rice is cooked and the water is absorbed.
  7. Fluff the pulao with a fork and remove from heat. Let it rest for 5 minutes before serving.
