Fluffy Vegetable Pulao
Fluffy Vegetable Pulao is a classic Anglo-Indian rice dish that is packed with the goodness of assorted vegetables and aromatic spices. This dish is perfect for a hearty meal and is sure to be a hit with family and friends.
Ingredients
- 2 cups basmati rice
- 1 onion, thinly sliced
- 1 carrot, diced
- 1 cup green peas
- 1 bell pepper, diced
- 4 cloves garlic, minced
- 1-inch ginger, grated
- 2 green chilies, slit
- 2 bay leaves
- 4 cloves
- 4 cardamom pods
- 1 cinnamon stick
- 1/2 teaspoon turmeric powder
- 1 teaspoon cumin seeds
- 2 tablespoons ghee (clarified butter)
- Salt to taste
- 4 cups water
Instructions
- Rinse the basmati rice under running water and soak for 30 minutes. Drain and set aside.
- Heat ghee in a large pot over medium heat. Add the cumin seeds, bay leaves, cloves, cardamom pods, and cinnamon stick. Sauté for a minute until fragrant.
- Add the sliced onions, garlic, ginger, and green chilies. Sauté until the onions turn golden brown.
- Add the diced carrots, green peas, and bell pepper. Sauté for 2-3 minutes.
- Stir in the soaked rice, turmeric powder, and salt. Mix well to coat the rice with the vegetables and spices.
- Pour in the water and bring to a boil. Reduce the heat to low, cover the pot, and let the pulao simmer for 15-20 minutes until the rice is cooked and the water is absorbed.
- Fluff the pulao with a fork and remove from heat. Let it rest for 5 minutes before serving.
