Fluffy Vegetable Uttapam

Ingredients

  • 1 cup rice flour
  • 1/2 cup semolina
  • 1/2 cup yogurt
  • 1 cup mixed vegetables (such as bell peppers, onions, tomatoes, and carrots), finely chopped
  • 1 green chili, finely chopped
  • 1 teaspoon ginger, grated
  • 1/2 teaspoon cumin seeds
  • Salt to taste
  • Water, as needed
  • Oil, for cooking

Instructions

  1. In a large mixing bowl, combine rice flour, semolina, and yogurt. Mix well to form a smooth batter.
  2. Add the mixed vegetables, green chili, ginger, cumin seeds, and salt to the batter. Mix until all the ingredients are well combined.
  3. Slowly add water to the batter to achieve a pouring consistency. Mix well to remove any lumps.
  4. Heat a non-stick pan or griddle over medium heat. Pour a ladleful of the batter onto the pan and spread it into a round shape.
  5. Drizzle some oil around the edges of the uttapam and cook until the bottom is golden brown.
  6. Flip the uttapam and cook the other side until it is cooked through and crispy.
  7. Repeat the process with the remaining batter.
  8. Serve the fluffy vegetable uttapam hot with chutney or sambar.
