Ingredients
- 1 cup rice flour
- 1/2 cup semolina
- 1/2 cup yogurt
- 1 cup mixed vegetables (such as bell peppers, onions, tomatoes, and carrots), finely chopped
- 1 green chili, finely chopped
- 1 teaspoon ginger, grated
- 1/2 teaspoon cumin seeds
- Salt to taste
- Water, as needed
- Oil, for cooking
Instructions
- In a large mixing bowl, combine rice flour, semolina, and yogurt. Mix well to form a smooth batter.
- Add the mixed vegetables, green chili, ginger, cumin seeds, and salt to the batter. Mix until all the ingredients are well combined.
- Slowly add water to the batter to achieve a pouring consistency. Mix well to remove any lumps.
- Heat a non-stick pan or griddle over medium heat. Pour a ladleful of the batter onto the pan and spread it into a round shape.
- Drizzle some oil around the edges of the uttapam and cook until the bottom is golden brown.
- Flip the uttapam and cook the other side until it is cooked through and crispy.
- Repeat the process with the remaining batter.
- Serve the fluffy vegetable uttapam hot with chutney or sambar.
