Ingredients

  • 3 1/2 cups all-purpose flour
  • 1 packet active dry yeast
  • 1 1/4 cups warm water
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons fresh rosemary, chopped
  • 1 teaspoon salt
  • 1 teaspoon honey
  • Sea salt, for sprinkling

Instructions

  1. In a large bowl, dissolve the yeast in the warm water and let it sit for 5 minutes until foamy.
  2. Stir in the olive oil, honey, salt, and half of the chopped rosemary.
  3. Add the flour, 1 cup at a time, mixing well after each addition until a dough forms.
  4. Knead the dough on a floured surface for 5-7 minutes until smooth and elastic.
  5. Place the dough in a greased bowl, cover with a clean towel, and let it rise in a warm place for 1 hour or until doubled in size.
  6. Preheat the oven to 400°F (200°C).
  7. Punch down the dough and transfer it to a greased baking sheet, pressing it out to fit the pan.
  8. Use your fingers to make dimples all over the dough, then brush with olive oil and sprinkle with the remaining rosemary and sea salt.
  9. Bake for 20-25 minutes or until golden brown.
  10. Let the focaccia cool slightly before slicing and serving.
