Fogo Island Lobster Bisque

Ingredients

  • 2 lobster tails, shells removed and meat chopped
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 4 cups fish stock
  • 1 cup heavy cream
  • 1/4 teaspoon cayenne pepper
  • Salt and pepper to taste
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • Chopped fresh parsley for garnish

Instructions

  7. Ladle the bisque into bowls and garnish with chopped fresh parsley.
