Ingredients
- 1 cup red lentils, rinsed
- 2 cups mixed vegetables (such as carrots, green beans, and bell peppers), chopped
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 teaspoon ginger, grated
- 2 tablespoons olive oil
- 1 teaspoon cumin
- 1 teaspoon turmeric
- 1/2 teaspoon paprika
- Salt and pepper to taste
- 2 cups vegetable broth
Instructions
- In a large pan, heat the olive oil over medium heat.
