Fossilized Falafel

Ingredients
- 1 cup dried chickpeas
- 1 small onion, chopped

Instructions

- Drain the chickpeas and transfer them to a food processor. Add the onion, garlic, parsley, cumin, coriander, salt, pepper, and baking soda. Process until the mixture is finely ground.
- Form the mixture into small balls and flatten them slightly to form patties.
- Heat oil in a skillet over medium heat. Cook the falafel patties for 3-4 minutes on each side, until golden brown and crispy.
- Warm the pita bread rounds in the skillet or oven. Stuff each pita with falafel, lettuce, tomato, and drizzle with tahini sauce.
