Foul Medames is a traditional Syrian fava bean salad that is packed with flavor and nutrients. This dish is perfect for a light and refreshing meal, and it's easy to make at home.
Ingredients
- 2 cups dried fava beans
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 tomato, diced
- 1/4 cup olive oil
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt to taste
- Chopped parsley for garnish
Instructions
- Soak the dried fava beans in water overnight.
- Drain the fava beans and rinse them well.
- In a large pot, cover the fava beans with water and bring to a boil. Reduce heat and simmer for 1-2 hours, or until the beans are tender.
- In a separate pan, sauté the onion and garlic in olive oil until soft and fragrant.
- Add the diced tomato, cumin, paprika, and salt to the onion mixture and cook for a few minutes.
- Add the cooked fava beans to the onion and tomato mixture and stir to combine. Cook for an additional 5-10 minutes.
- Remove from heat and let the salad cool slightly before serving.
- Garnish with chopped parsley before serving.
