Ingredients

  • 2 cups dried fava beans
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tomato, diced
  • 1/4 cup olive oil
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt to taste
  • Chopped parsley for garnish

Instructions

  1. Soak the dried fava beans in water overnight.
  2. Drain the fava beans and rinse them well.
  3. In a large pot, cover the fava beans with water and bring to a boil. Reduce heat and simmer for 1-2 hours, or until the beans are tender.
  4. In a separate pan, sauté the onion and garlic in olive oil until soft and fragrant.
  5. Add the diced tomato, cumin, paprika, and salt to the onion mixture and cook for a few minutes.
  6. Add the cooked fava beans to the onion and tomato mixture and stir to combine. Cook for an additional 5-10 minutes.
  7. Remove from heat and let the salad cool slightly before serving.
  8. Garnish with chopped parsley before serving.
