Fragrant Acehnese Chicken Curry

Ingredients

  • 1.5 lbs chicken, cut into pieces
  • 2 onions, finely chopped
  • 3 garlic cloves, minced
  • 1 inch ginger, grated
  • 2 tomatoes, diced
  • 1 cup coconut milk
  • 2 tbsp Acehnese curry paste
  • 1 cinnamon stick
  • 3 cardamom pods
  • 1 tsp turmeric powder
  • 1 tsp coriander powder
  • 1 tsp cumin powder
  • Salt to taste
  • 2 tbsp vegetable oil
  • Fresh cilantro for garnish

Instructions

  1. Heat the vegetable oil in a large pot over medium heat. Add the onions, garlic, and ginger. Sauté until the onions are soft and translucent.
  2. Add the Acehnese curry paste, cinnamon stick, cardamom pods, turmeric, coriander, and cumin powder. Cook for 2 minutes, stirring constantly.
  3. Add the chicken pieces and cook until they are browned on all sides.
  4. Add the diced tomatoes and coconut milk. Season with salt and bring to a simmer. Cover and cook for 30 minutes, or until the chicken is tender.
  5. Garnish with fresh cilantro and serve hot with steamed rice or crusty bread.
