Ingredients
- 1.5 lbs chicken, cut into pieces
- 2 onions, finely chopped
- 3 garlic cloves, minced
- 1 inch ginger, grated
- 2 tomatoes, diced
- 1 cup coconut milk
- 2 tbsp Acehnese curry paste
- 1 cinnamon stick
- 3 cardamom pods
- 1 tsp turmeric powder
- 1 tsp coriander powder
- 1 tsp cumin powder
- Salt to taste
- 2 tbsp vegetable oil
- Fresh cilantro for garnish
Instructions
- Heat the vegetable oil in a large pot over medium heat. Add the onions, garlic, and ginger. Sauté until the onions are soft and translucent.
- Add the Acehnese curry paste, cinnamon stick, cardamom pods, turmeric, coriander, and cumin powder. Cook for 2 minutes, stirring constantly.
- Add the chicken pieces and cook until they are browned on all sides.
- Add the diced tomatoes and coconut milk. Season with salt and bring to a simmer. Cover and cook for 30 minutes, or until the chicken is tender.
- Garnish with fresh cilantro and serve hot with steamed rice or crusty bread.
