Fragrant Beef and Potato Tagine (Tajine de Bœuf et de Pommes de Terre Parfumé)

Ingredients

  • 500g beef, cubed
  • 4 potatoes, peeled and cubed
  • 2 onions, finely chopped
  • 3 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cinnamon
  • 1 teaspoon paprika
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon cayenne pepper
  • 2 tablespoons olive oil
  • 2 cups beef broth
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. In a large tajine or heavy-bottomed pot, heat the olive oil over medium heat.
  2. Add the onions and garlic, and cook until softened.
  3. Add the beef cubes and brown on all sides.
  4. Stir in the ground cumin, coriander, turmeric, cinnamon, paprika, ginger, and cayenne pepper.
  5. Add the potatoes and beef broth. Season with salt and pepper.
  6. Bring to a simmer, then reduce the heat to low, cover, and cook for 1 hour or until the beef is tender and the potatoes are cooked through.
  7. Garnish with fresh cilantro before serving.
