Ingredients
- 500g beef, cubed
- 4 potatoes, peeled and cubed
- 2 onions, finely chopped
- 3 garlic cloves, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon ground turmeric
- 1 teaspoon ground cinnamon
- 1 teaspoon paprika
- 1/2 teaspoon ground ginger
- 1/4 teaspoon cayenne pepper
- 2 tablespoons olive oil
- 2 cups beef broth
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- In a large tajine or heavy-bottomed pot, heat the olive oil over medium heat.
- Add the onions and garlic, and cook until softened.
- Add the beef cubes and brown on all sides.
- Stir in the ground cumin, coriander, turmeric, cinnamon, paprika, ginger, and cayenne pepper.
- Add the potatoes and beef broth. Season with salt and pepper.
- Bring to a simmer, then reduce the heat to low, cover, and cook for 1 hour or until the beef is tender and the potatoes are cooked through.
- Garnish with fresh cilantro before serving.
