Fragrant Beef and Vegetable Stir-Fry (Sauté de Bœuf et de Légumes Parfumé)
Sauté de Bœuf et de Légumes Parfumé, or Fragrant Beef and Vegetable Stir-Fry, is a popular dish in Djiboutian cuisine. This flavorful stir-fry is a perfect combination of tender beef and fresh vegetables, seasoned with aromatic spices.
Ingredients
- 1 lb (450g) beef, thinly sliced
- 2 tablespoons vegetable oil
- 1 onion, sliced
- 2 bell peppers, sliced
- 2 carrots, julienned
- 3 cloves garlic, minced
- 1 tablespoon ginger, grated
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 teaspoon sugar
- 1 teaspoon black pepper
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon turmeric
- 1/4 cup fresh cilantro, chopped
Instructions
- Heat 1 tablespoon of oil in a large skillet or wok over high heat.
- Add the beef and stir-fry for 2-3 minutes until browned. Remove the beef from the skillet and set aside.
- Heat the remaining oil in the same skillet. Add the onion, bell peppers, and carrots. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.
- Add the garlic, ginger, soy sauce, oyster sauce, sugar, black pepper, cumin, paprika, and turmeric. Stir-fry for another 2 minutes.
- Return the beef to the skillet and toss to combine with the vegetables and spices. Cook for an additional 2-3 minutes.
- Remove from heat and garnish with fresh cilantro before serving.
