Fragrant Beef and Vegetable Stir-Fry (Sauté de Bœuf et de Légumes Parfumé)

Ingredients

  • 1 lb (450g) beef, thinly sliced
  • 2 tablespoons vegetable oil
  • 1 onion, sliced
  • 2 bell peppers, sliced
  • 2 carrots, julienned
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sugar
  • 1 teaspoon black pepper
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon turmeric
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. Heat 1 tablespoon of oil in a large skillet or wok over high heat.
  2. Add the beef and stir-fry for 2-3 minutes until browned. Remove the beef from the skillet and set aside.
  3. Heat the remaining oil in the same skillet. Add the onion, bell peppers, and carrots. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.
  4. Add the garlic, ginger, soy sauce, oyster sauce, sugar, black pepper, cumin, paprika, and turmeric. Stir-fry for another 2 minutes.
  5. Return the beef to the skillet and toss to combine with the vegetables and spices. Cook for an additional 2-3 minutes.
  6. Remove from heat and garnish with fresh cilantro before serving.
