Fragrant Beshbarmak with Lamb (Бешбармак с бараниной)
Beshbarmak is a traditional Kyrgyz dish that translates to "five fingers" in reference to the way it is traditionally eaten - with one's hands. This fragrant beshbarmak recipe features tender lamb and aromatic spices, making it a flavorful and comforting meal.
Ingredients
- 1 kg lamb, cut into pieces
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 2 tsp cumin
- 1 tsp paprika
- 1/2 tsp black pepper
- Salt to taste
- 500g flat egg noodles
- 4 potatoes, peeled and cubed
- Fresh parsley for garnish
Instructions
- In a large pot, combine the lamb, onion, garlic, cumin, paprika, black pepper, and salt. Add enough water to cover the meat, then bring to a boil. Reduce the heat and simmer for 1.5 hours, or until the meat is tender.
- Remove the meat from the broth and set aside. Add the potatoes to the broth and cook until tender.
- Cook the egg noodles according to the package instructions.
- To serve, place the cooked noodles on a large serving platter. Arrange the cooked lamb and potatoes on top of the noodles. Ladle some of the broth over the dish. Garnish with fresh parsley.
