Fragrant Beshbarmak with Lamb (Бешбармак с бараниной)

Ingredients

  • 1 kg lamb, cut into pieces
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 2 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp black pepper
  • Salt to taste
  • 500g flat egg noodles
  • 4 potatoes, peeled and cubed
  • Fresh parsley for garnish

Instructions

  1. In a large pot, combine the lamb, onion, garlic, cumin, paprika, black pepper, and salt. Add enough water to cover the meat, then bring to a boil. Reduce the heat and simmer for 1.5 hours, or until the meat is tender.
  2. Remove the meat from the broth and set aside. Add the potatoes to the broth and cook until tender.
  3. Cook the egg noodles according to the package instructions.
  4. To serve, place the cooked noodles on a large serving platter. Arrange the cooked lamb and potatoes on top of the noodles. Ladle some of the broth over the dish. Garnish with fresh parsley.
