Ingredients

  • 4 chicken thighs
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon Shaoxing wine
  • 1 teaspoon sugar
  • 2 slices ginger
  • 2 cloves garlic, minced
  • 2 green onions, chopped
  • 2 cups chicken broth
  • 1 star anise
  • 1 cinnamon stick
  • 1 dried tangerine peel
  • 1 teaspoon Sichuan peppercorns
  • 1 tablespoon vegetable oil

Instructions

  1. In a bowl, mix together soy sauce, oyster sauce, Shaoxing wine, and sugar. Marinate the chicken thighs in this mixture for 15 minutes.
  2. Heat vegetable oil in a pot over medium heat. Add ginger, garlic, and green onions. Stir-fry until fragrant.
  3. Add the marinated chicken thighs to the pot and brown on both sides.
  4. Pour in the chicken broth and add star anise, cinnamon stick, dried tangerine peel, and Sichuan peppercorns. Bring to a boil, then reduce heat to low and simmer for 45 minutes.
  5. Once the chicken is tender, remove it from the pot and place it on a serving dish.
  6. Turn up the heat to reduce the sauce until it thickens. Pour the sauce over the chicken and serve hot.
