Fragrant Braised Pork Belly (香烤红烧肉)
香烤红烧肉 (Fragrant Braised Pork Belly) is a classic dish from Liaoning Cuisine, known for its rich flavors and tender texture.
Ingredients
- 1.5 kg pork belly, skin on
- 3 slices ginger
- 2 spring onions, cut into 3cm lengths
- 2 star anise
- 1 cinnamon stick
- 3 tbsp Shaoxing wine
- 2 tbsp light soy sauce
- 1 tbsp dark soy sauce
- 3 tbsp rock sugar
- 1 tsp Sichuan peppercorns
- 1.5 L water
Instructions
- Preheat the oven to 180°C.
- Score the pork belly skin with a sharp knife and place it in a large pot of boiling water for 5 minutes. Remove and pat dry.
- Place the pork belly, ginger, spring onions, star anise, and cinnamon stick in a roasting tray. Roast in the preheated oven for 30 minutes until the skin is crispy.
- In a separate pot, combine the Shaoxing wine, light soy sauce, dark soy sauce, rock sugar, Sichuan peppercorns, and water. Bring to a boil.
- Reduce the heat to low and add the roasted pork belly to the pot. Simmer for 1.5 hours, turning the pork occasionally.
- Once the pork is tender, remove from the pot and slice into pieces. Serve hot with steamed rice.
