Ingredients

  • 1.5 kg pork belly, skin on
  • 3 slices ginger
  • 2 spring onions, cut into 3cm lengths
  • 2 star anise
  • 1 cinnamon stick
  • 3 tbsp Shaoxing wine
  • 2 tbsp light soy sauce
  • 1 tbsp dark soy sauce
  • 3 tbsp rock sugar
  • 1 tsp Sichuan peppercorns
  • 1.5 L water

Instructions

  1. Preheat the oven to 180°C.
  2. Score the pork belly skin with a sharp knife and place it in a large pot of boiling water for 5 minutes. Remove and pat dry.
  3. Place the pork belly, ginger, spring onions, star anise, and cinnamon stick in a roasting tray. Roast in the preheated oven for 30 minutes until the skin is crispy.
  4. In a separate pot, combine the Shaoxing wine, light soy sauce, dark soy sauce, rock sugar, Sichuan peppercorns, and water. Bring to a boil.
  5. Reduce the heat to low and add the roasted pork belly to the pot. Simmer for 1.5 hours, turning the pork occasionally.
  6. Once the pork is tender, remove from the pot and slice into pieces. Serve hot with steamed rice.
