Fragrant Chicken and Rice Pilaf (Pilaf de Poulet et de Riz Parfumé)

Ingredients
- 2 tablespoons olive oil
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 1 lb (450g) chicken breast, cut into bite-sized pieces
- 1 1/2 cups (300g) basmati rice
- 3 cups (720ml) chicken broth
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon ground turmeric
- Salt and pepper to taste
- Chopped fresh cilantro for garnish
Instructions
- Heat the olive oil in a large pot over medium heat. Add the chopped onion and cook until softened.
- Add the minced garlic and cook for another minute.
- Add the chicken pieces to the pot and cook until browned on all sides.
- Stir in the rice, cumin, coriander, turmeric, salt, and pepper. Cook for 2 minutes, stirring constantly.
- Pour in the chicken broth and bring to a boil. Reduce heat to low, cover, and simmer for 15-20 minutes or until the rice is tender and the liquid is absorbed.
- Fluff the pilaf with a fork and let it sit, covered, for 5 minutes before serving.
- Garnish with chopped cilantro before serving.
