Fragrant Chicken and Rice Pilaf (Pilaf de Poulet et de Riz Parfumé)

Ingredients

  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 1 lb (450g) chicken breast, cut into bite-sized pieces
  • 1 1/2 cups (300g) basmati rice
  • 3 cups (720ml) chicken broth
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground turmeric
  • Salt and pepper to taste
  • Chopped fresh cilantro for garnish

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the chopped onion and cook until softened.
  2. Add the minced garlic and cook for another minute.
  3. Add the chicken pieces to the pot and cook until browned on all sides.
  4. Stir in the rice, cumin, coriander, turmeric, salt, and pepper. Cook for 2 minutes, stirring constantly.
  5. Pour in the chicken broth and bring to a boil. Reduce heat to low, cover, and simmer for 15-20 minutes or until the rice is tender and the liquid is absorbed.
  6. Fluff the pilaf with a fork and let it sit, covered, for 5 minutes before serving.
  7. Garnish with chopped cilantro before serving.
