Fragrant Coconut Curry (Cà ri)
Cà ri, or fragrant coconut curry, is a popular dish in Vietnamese cuisine known for its rich and aromatic flavors. This recipe combines tender meat or vegetables with a creamy coconut milk base, infused with a blend of fragrant spices and herbs.
Ingredients
- 1 lb (450g) chicken or tofu, cut into bite-sized pieces
- 2 tbsp (30ml) vegetable oil
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 red bell pepper, sliced
- 2 carrots, sliced
- 1 can (14oz/400ml) coconut milk
- 2 tbsp (30g) curry powder
- 1 tsp (5g) turmeric
- 1 tsp (5g) cumin
- 1 tsp (5g) paprika
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Heat the vegetable oil in a large pot over medium heat. Add the onion and garlic, and sauté until fragrant.
- Add the chicken or tofu to the pot and cook until browned on all sides.
- Stir in the curry powder, turmeric, cumin, and paprika, coating the meat or tofu evenly.
- Pour in the coconut milk and bring the mixture to a simmer.
- Add the red bell pepper and carrots, and let the curry simmer for 20-25 minutes, or until the meat is cooked through and the vegetables are tender.
- Season with salt and pepper to taste.
- Garnish with fresh cilantro before serving.
