Fragrant Coconut Fish Curry

Ingredients

  • 500g fish fillets, cut into pieces
  • 1 cup coconut milk
  • 2 onions, finely chopped
  • 3 tomatoes, chopped
  • 2 green chilies, slit
  • 1 tsp ginger-garlic paste
  • 1 tsp turmeric powder
  • 2 tsp red chili powder
  • 1 tsp coriander powder
  • 1/2 tsp cumin seeds
  • 1/2 tsp mustard seeds
  • A few curry leaves
  • 2 tbsp oil
  • Salt to taste

Instructions

  1. Heat oil in a pan and add cumin seeds, mustard seeds, and curry leaves. Sauté until the seeds crackle.
  2. Add chopped onions and green chilies. Sauté until the onions turn golden brown.
  3. Stir in ginger-garlic paste and cook for 2 minutes.
  4. Add turmeric powder, red chili powder, and coriander powder. Cook for a minute.
  5. Add chopped tomatoes and cook until they turn mushy.
  6. Pour in the coconut milk and bring it to a gentle boil.
  7. Add the fish pieces and simmer for 10-15 minutes until the fish is cooked through.
  8. Season with salt and garnish with fresh coriander leaves.
