Fragrant Coconut Rice (ತೆಂಗಿನ ಅನ್ನ)
ತೆಂಗಿನ ಅನ್ನ (Fragrant Coconut Rice) is a traditional dish from Udupi Cuisine that is known for its aromatic flavor and creamy texture. This dish is perfect for special occasions or as a side dish to accompany a variety of curries and gravies.
Ingredients
- 2 cups basmati rice
- 1 cup grated coconut
- 2-3 green chilies, finely chopped
- 1 tsp mustard seeds
- 1/2 tsp cumin seeds
- 1/4 cup cashew nuts
- 2-3 tbsp ghee (clarified butter)
- 1 sprig curry leaves
- Salt to taste
Instructions
- Wash the basmati rice and soak it in water for 15-20 minutes. Drain the water and keep the rice aside.
- Heat ghee in a pan and add mustard seeds. Once they start to splutter, add cumin seeds, cashew nuts, and green chilies. Sauté until the cashew nuts turn golden brown.
- Add grated coconut and curry leaves to the pan. Sauté for a few minutes until the coconut turns aromatic.
- Now, add the soaked basmati rice to the pan and mix well with the coconut mixture. Add salt to taste.
- Transfer the rice mixture to a rice cooker or a pot. Add 4 cups of water and cook until the rice is done.
- Once the rice is cooked, fluff it gently with a fork and serve hot.
