ತೆಂಗಿನ ಅನ್ನ (Fragrant Coconut Rice) is a traditional dish from Udupi Cuisine that is known for its aromatic flavor and creamy texture. This dish is perfect for special occasions or as a side dish to accompany a variety of curries and gravies.

Fragrant Coconut Rice (ತೆಂಗಿನ ಅನ್ನ)

Ingredients

  • 2 cups basmati rice
  • 1 cup grated coconut
  • 2-3 green chilies, finely chopped
  • 1 tsp mustard seeds
  • 1/2 tsp cumin seeds
  • 1/4 cup cashew nuts
  • 2-3 tbsp ghee (clarified butter)
  • 1 sprig curry leaves
  • Salt to taste

Instructions

  1. Wash the basmati rice and soak it in water for 15-20 minutes. Drain the water and keep the rice aside.
  2. Heat ghee in a pan and add mustard seeds. Once they start to splutter, add cumin seeds, cashew nuts, and green chilies. Sauté until the cashew nuts turn golden brown.
  3. Add grated coconut and curry leaves to the pan. Sauté for a few minutes until the coconut turns aromatic.
  4. Now, add the soaked basmati rice to the pan and mix well with the coconut mixture. Add salt to taste.
  5. Transfer the rice mixture to a rice cooker or a pot. Add 4 cups of water and cook until the rice is done.
  6. Once the rice is cooked, fluff it gently with a fork and serve hot.
