Fragrant Crispy Lamb (香酥羊肉)

Ingredients

  • 500g lamb, thinly sliced
  • 3 tbsp cornstarch
  • 2 tbsp soy sauce
  • 1 tbsp Shaoxing wine
  • 1 tsp sugar
  • 2 cloves garlic, minced
  • 1 tsp ginger, minced
  • 2 green onions, chopped
  • 1/2 cup vegetable oil for frying

Instructions

  1. In a bowl, mix the lamb slices with cornstarch until well coated.
  2. Heat the vegetable oil in a wok or frying pan over medium-high heat.
  3. Fry the lamb slices in batches until crispy and golden brown. Remove and drain on paper towels.
  4. In a separate pan, heat a small amount of oil and sauté the garlic, ginger, and green onions until fragrant.
  5. Add the soy sauce, Shaoxing wine, and sugar to the pan, then return the crispy lamb to the pan and toss to coat.
  6. Transfer the fragrant crispy lamb to a serving dish and garnish with additional green onions if desired.
