香煎茄子 (Fragrant Eggplant Stir-Fry) is a classic dish in Jiangxi Cuisine, known for its aromatic flavors and tender eggplant. This recipe is a perfect balance of savory and sweet, making it a delightful addition to any meal.
Ingredients
- 2 large eggplants, cut into cubes
- 3 tbsp vegetable oil
- 3 cloves garlic, minced
- 1 red chili, thinly sliced
- 2 tbsp soy sauce
- 1 tbsp sugar
- 1 tbsp rice vinegar
- 1 tsp sesame oil
- Salt to taste
- Fresh cilantro for garnish
Instructions
- Heat 2 tbsp of vegetable oil in a large pan over medium heat.
- Add the eggplant cubes and stir-fry for 5-7 minutes until they are golden and tender. Remove from the pan and set aside.
- Heat the remaining 1 tbsp of vegetable oil in the same pan. Add the minced garlic and sliced red chili, and stir-fry for 1-2 minutes until fragrant.
- Return the cooked eggplant to the pan. Add soy sauce, sugar, rice vinegar, and sesame oil. Stir-fry for another 2-3 minutes until the sauce coats the eggplant evenly.
- Season with salt to taste and garnish with fresh cilantro.
