Fragrant Eggplant Stir-Fry (香煎茄子)

Ingredients

  • 2 large eggplants, cut into cubes
  • 3 tbsp vegetable oil
  • 3 cloves garlic, minced
  • 1 red chili, thinly sliced
  • 2 tbsp soy sauce
  • 1 tbsp sugar
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat 2 tbsp of vegetable oil in a large pan over medium heat.
  2. Add the eggplant cubes and stir-fry for 5-7 minutes until they are golden and tender. Remove from the pan and set aside.
  3. Heat the remaining 1 tbsp of vegetable oil in the same pan. Add the minced garlic and sliced red chili, and stir-fry for 1-2 minutes until fragrant.
  4. Return the cooked eggplant to the pan. Add soy sauce, sugar, rice vinegar, and sesame oil. Stir-fry for another 2-3 minutes until the sauce coats the eggplant evenly.
  5. Season with salt to taste and garnish with fresh cilantro.
