Fragrant Feta and Spinach Stuffed Mushrooms (Αρωματικά μανιτάρια γεμιστά με φέτα και σπανάκι)
These fragrant feta and spinach stuffed mushrooms are a delightful appetizer or side dish that brings out the flavors of Komi cuisine.
Ingredients
- 12 large mushrooms, stems removed and reserved
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 2 garlic cloves, minced
- 2 cups fresh spinach, chopped
- 1/2 cup crumbled feta cheese
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Chop the mushroom stems and set aside.
- Heat olive oil in a skillet over medium heat. Add the chopped onion and garlic, and cook until softened.
- Add the chopped mushroom stems and cook for 5 minutes.
- Stir in the chopped spinach and cook until wilted. Remove from heat and let it cool.
- Once cooled, stir in the crumbled feta cheese and season with salt and pepper.
- Stuff each mushroom cap with the spinach and feta mixture.
- Place the stuffed mushrooms on a baking sheet and bake for 20-25 minutes, or until the mushrooms are tender.
- Serve hot and enjoy!
