Fragrant Feta and Spinach Stuffed Mushrooms (Αρωματικά μανιτάρια γεμιστά με φέτα και σπανάκι)

Ingredients

  • 12 large mushrooms, stems removed and reserved
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 2 cups fresh spinach, chopped
  • 1/2 cup crumbled feta cheese
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Chop the mushroom stems and set aside.
  3. Heat olive oil in a skillet over medium heat. Add the chopped onion and garlic, and cook until softened.
  4. Add the chopped mushroom stems and cook for 5 minutes.
  5. Stir in the chopped spinach and cook until wilted. Remove from heat and let it cool.
  6. Once cooled, stir in the crumbled feta cheese and season with salt and pepper.
  7. Stuff each mushroom cap with the spinach and feta mixture.
  8. Place the stuffed mushrooms on a baking sheet and bake for 20-25 minutes, or until the mushrooms are tender.
  9. Serve hot and enjoy!
