Fragrant Ginger Scallion Lobster

Ingredients

  • 2 live lobsters (about 1 1/2 pounds each)
  • 3 tablespoons vegetable oil
  • 1/4 cup fresh ginger, julienned
  • 1/2 cup scallions, cut into 2-inch pieces
  • 1 tablespoon Shaoxing wine
  • 1 tablespoon soy sauce
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon white pepper
  • 1 tablespoon cornstarch
  • 1/4 cup chicken broth

Instructions

  1. Prepare the lobsters by cutting them into pieces.
  2. Heat the oil in a wok over high heat and stir-fry the ginger and scallions for 30 seconds.
  3. Add the lobster pieces and stir-fry for 2 minutes.
  4. Pour in the Shaoxing wine, soy sauce, sugar, salt, and white pepper. Stir-fry for another 2 minutes.
  5. In a small bowl, mix the cornstarch and chicken broth. Pour the mixture into the wok and stir until the sauce thickens.
  6. Transfer the lobster to a serving plate and serve hot.
