Ingredients
- 2 live lobsters (about 1 1/2 pounds each)
- 3 tablespoons vegetable oil
- 1/4 cup fresh ginger, julienned
- 1/2 cup scallions, cut into 2-inch pieces
- 1 tablespoon Shaoxing wine
- 1 tablespoon soy sauce
- 1 teaspoon sugar
- 1/2 teaspoon salt
- 1/4 teaspoon white pepper
- 1 tablespoon cornstarch
- 1/4 cup chicken broth
Instructions
- Prepare the lobsters by cutting them into pieces.
- Heat the oil in a wok over high heat and stir-fry the ginger and scallions for 30 seconds.
- Add the lobster pieces and stir-fry for 2 minutes.
- Pour in the Shaoxing wine, soy sauce, sugar, salt, and white pepper. Stir-fry for another 2 minutes.
- In a small bowl, mix the cornstarch and chicken broth. Pour the mixture into the wok and stir until the sauce thickens.
- Transfer the lobster to a serving plate and serve hot.
